Harder cheeses last longer than soft (it all comes back to amount of moisture) so those such as cheddar and parmesan are fine even after mould has started to grow on it – just cut it off before eating, duh.

Generally, hard cheeses are good for about a month whilst softer cheeses such as camembert or Philadelphia will go off sneakily when you’re not paying attention.
