It isn’t there so the sommelier can get a better grip on the bottle whilst they’re pouring, which is what I thought! It’s actually there to compensate for the pressure during the corking process.

The side and bottom of a bottle are weak spots, and the indentation helps evenly distribute the pressure inside the bottle! That is why it’s so much deeper on champagne bottles, as they are under more pressure due to carbonation.
